Ingredients:
  • 2 teaspoons butter
  • 1 slice sourdough bread, toasted
  • Dijon mustard
  • 0.5 avocado - peeled, pitted, and sliced
  • 2 tablespoons grated Parmesan cheese, or more to taste
Instructions:
  • In a skillet over medium heat, melt butter. Add eggs and cook until whites are mostly firm. Break yolks and continue cooking until eggs are completely set, for 2 to 3 minutes.
  • On one side of the toasted sourdough, spread a layer of tangy Dijon mustard. Place creamy avocado slices on top, followed by the cooked eggs. Finish off with a generous sprinkle of savory Parmesan cheese.
