Delicious gluten-free crêpes made with everyday ingredients, perfect for sweet or savory toppings.
Ingredients:
  • 2 cups gluten-free all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon xanthan gum
  • 4 eggs
  • 1.5 cups milk
  • 0.25 cup butter, melted

Instructions:
  • In a large bowl, mix flour, salt, and xanthan gum, creating a well in the center. In a separate bowl, whisk together eggs and milk, then pour into the well and stir until slightly combined. Add melted butter and mix until a soft batter forms, about 1 to 2 minutes. Cover and allow to rest for 45 minutes.
  • In a buttered 8-inch skillet over medium heat, pour 2 tablespoons of batter and swirl to form a thin layer. Cook until the top is no longer wet and the bottom is light brown, about 1 to 2 minutes. Gently loosen the edges with a spatula, flip, and cook the other side until light brown, about 1 more minute.
