Easy and flavorful pumpkin muffins, perfect for fall with pumpkin puree and spices.
Ingredients:
  • cooking spray
  • 1 (15 ounce) can pumpkin puree
  • 0.75 cup melted butter
  • 0.75 cup brown sugar
  • 0.25 cup water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 0.5 cup white sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon baking powder
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin pan with greased cups or paper liners sprayed with cooking spray.
  • Combine the pumpkin puree, butter, brown sugar, water, eggs, and vanilla extract in a large bowl, blending until smooth.
  • Combine flour, white sugar, pumpkin spice, salt, baking soda, cinnamon, and baking powder in a separate bowl. Add the mixture to the pumpkin and mix until well combined.
  • Carefully scoop the batter into the muffin cups that have been prepared, making sure to fill each one to about 3/4 full.
  • Bake in the preheated oven until muffins are golden brown on top and spring back when touched, for 25 to 30 minutes.
