Spicy South African chicken livers and onions, seared to perfection.
Ingredients:
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 teaspoon cayenne pepper, or to taste
  • 0.5 pound chicken livers, rinsed and trimmed
  • salt and ground black pepper to taste
  • 1 tablespoon brandy
Instructions:
  • In a skillet over medium heat, sauté onions in olive oil until soft, about 5 to 7 minutes.
  • Turn up the heat to high. Quickly sprinkle the onion with cayenne pepper, cook for 10 seconds, then add the chicken livers. Season with salt and black pepper. Saute the chicken livers until fully cooked and no longer pink in the center, about 10 minutes. Use a meat thermometer to ensure they reach 165 degrees F (74 degrees C).
  • Take the pan off the heat and drizzle brandy over the livers. Use a wooden spoon to scrape up the flavorful bits stuck to the bottom of the pan. Give it a stir and serve right away.
