Savor a fusion of Persian spices in a mouthwatering pumpkin and beef stew.
Ingredients:
  • 3 tablespoons vegetable oil, divided
  • 0.5 pumpkin - peeled, seeded, and cut into 2-inch cubes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 0.5 teaspoon ground turmeric
  • 1 pound beef stew meat, cut into 1 inch cubes
  • 2 cups water
  • 0.5 teaspoon ground black pepper
  • 12 pitted prunes
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 0.5 teaspoon ground cinnamon
  • 0.33333334326744 teaspoon saffron
Instructions:
  • In a skillet over medium-high heat, sauté the pumpkin in 1 tablespoon of oil until it turns a light golden brown, approximately 5 minutes.
  • In a stock pot over medium-high heat, heat 2 tablespoons of oil. Saute onions and garlic until golden, about 5 minutes. Stir in turmeric, then add the beef and brown for 5 minutes. Pour in water, salt, and pepper. Bring to a boil, then reduce heat and simmer until beef is slightly tender, approximately 30 minutes.
  • Combine the pumpkin, prunes, vinegar, sugar, salt, and cinnamon in a stock pot. Simmer until the beef and pumpkin are tender, approximately 45 minutes. Finish by garnishing with saffron.
