Make this quick and easy 6-ingredient dish in just 30 minutes.
Ingredients:
  • 375g spaghetti
  • 600g butternut pumpkin, peeled, seeded, cut into 3cm pieces
  • 500g RSPCA Approved Chicken Thigh Fillets, thinly sliced
  • 150g basil pesto
Instructions:
  • Prepare the spaghetti according to the package instructions until al dente. Drain thoroughly. Simultaneously, steam the pumpkin over boiling water for 10-15 minutes until tender.
  • While the pumpkin is cooking, heat oil in a large frying pan over high heat. Cook the chicken in batches for 5 minutes or until browned and almost cooked through. Transfer the chicken to a heatproof bowl. Add the onion to the frying pan and cook, stirring, for 3 minutes or until tender.
  • Add the cooked chicken back to the pan along with the spaghetti and pesto. Stir everything together for 5 minutes until fully combined and the chicken is cooked. Then mix in the pumpkin, season, and toss to combine.
