Create flavorful Genoese pesto by blending fresh basil, garlic, Italian cheeses, and olive oil in a mortar and pestle.
Ingredients:
  • 2 cloves garlic, or more to taste
  • 2 tablespoons pine nuts
  • 1 bunch fresh basil leaves
  • 0.5 cup grated Parmigiano-Reggiano cheese
  • 1.5 tablespoons grated pecorino Romano cheese
  • 0.5 cup extra-virgin olive oil
Instructions:
  • Using a mortar and pestle, crush garlic until paste forms. Add pine nuts and crush together. Gradually add basil leaves, using circular movements with the pestle until a smooth paste forms.
  • Combine the Parmigiano-Reggiano and pecorino Romano cheeses with a wooden spoon, then mix in the olive oil until the pesto is well blended.
