Elevate rice with a delectable pesto twist for a magical meal in minutes!
Ingredients:
  • 1 chicken style stock cube or vegetable stock cube
  • 220g rice
  • 95g pesto
  • 1/2 lemon, juiced
  • Olive oil, to drizzle
  • Salt & freshly ground pepper
Instructions:
  • In 2 cups (500ml) of boiling water, infuse the stock cube until dissolved. Mix the rice and 1 1/2 tablespoons of pesto in a medium saucepan.
  • Pour the stock into the saucepan and bring to a boil over high heat. Reduce heat to low, cover, and simmer for 20 minutes. Fluff the grains with a fork.
  • Combine the bright lemon juice and the rest of the flavorful pesto while adding a luxurious drizzle of olive oil. Finish by seasoning with a pinch of salt and pepper. Serve promptly.
