Celebrate birthdays with joy and chocolatey bliss with this choc-tastic cake recipe that guarantees happy memories.
Ingredients:
  • 200 g unsalted butter plus extra for greasing
  • 200 g golden caster sugar
  • 200 g dark chocolate (70% cocoa solids)
  • 200 g gluten-free self-raising flour plus extra for dusting
  • 6 large eggs
  • 2 teaspoons vanilla bean paste
  • 1 orange
  • fresh fruit, to decorate optional
  • 200 g icing sugar
  • 200 g soft unsalted butter
Instructions:
  • 1. Preheat the oven to 160ºC/325ºF/gas 3. Cube the butter and combine with sugar in a heatproof bowl. Break the chocolate into pieces and add to the bowl. Melt the mixture over simmering water. Stir occasionally until smooth. 2. Grease and line a 28cm cake tin. Alternatively, dust with flour and shake out excess. Let the melted chocolate mixture cool for 5 minutes. Whisk in the eggs one at a time. Add vanilla and orange zest. Sift in flour and fold gently until just combined. 3. Pour the batter into the prepared tin. Bake for 40-50 minutes until springy and a skewer comes out clean. Cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. 4. Melt the chocolate for the buttercream over simmering water. Sift icing sugar into a bowl. Mix in the melted chocolate, butter, and a pinch of salt until smooth. Spread the buttercream over the cake. Decorate with raspberries, chocolate shavings, and candles. Enjoy!
