Elevate classic ham and cheese toast with a French twist.
Ingredients:
  • 3 long bread rolls
  • 23.40 gm Dijon mustard
  • 100g piece gruyere, very thinly sliced
  • 125g shaved ham, thinly sliced
  • 180ml (3/4 cup) milk
  • 60ml (1/4 cup) pouring cream
  • 36.80 gm vegetable oil
  • 40g butter
  • 24 cornichons (small sour gherkins)
Instructions:
  • Prepare rolls by trimming the ends and slicing them into 24 thin 7mm slices. Spread mustard on each slice. Layer cheese and ham on half of the slices, then top with the remaining slices to create sandwiches. Secure sandwiches with toothpicks inserted in the center.
  • Combine eggs, milk, cream, sea salt, and freshly ground black pepper in a small bowl, whisk until smooth.
  • In a non-stick frying pan over medium heat, warm half of the oil and butter. Dip each sandwich into the egg mixture, letting the excess drip off, then fry until golden for about 1 minute. Remove the toothpick, flip the sandwich, and cook for another 30 seconds until golden. Place the croques-monsieur on a baking paper-lined tray and repeat with the remaining sandwiches.
  • Preheat oven to 190°C. Just before serving, add 2 cornichons on top of each croque-monsieur and secure with a piece of string. Bake for 10 minutes or until heated through. Serve right away.
