Phenomenal Pork Tacos

Savory ground pork tacos with zesty Mexican seasoning, charred poblano pepper, and soft tortillas for a mouthwatering meal!
Ingredients:
  • 1 red onion, halved and thinly sliced
  • 1 Roma tomato, seeded and finely chopped
  • 1 ripe kiwi, diced
  • 1 lime, quartered, divided
  • 2 tablespoons chopped cilantro, divided
  • 4 tablespoons sour cream
  • 1 poblano pepper - cored, seeded, and finely chopped
  • 10 ounces ground pork
  • 1 tablespoon Mexican seasoning
  • 2 tablespoons chicken stock
  • 1 tablespoon tomato paste
  • 6 flour tortillas
Instructions:
  • Finely chop a couple slices of onion until you have 1 tablespoon. Combine the minced onion with tomato, kiwi, juice from 2 lime wedges, most of the cilantro, salt, and pepper in a small bowl to create a delicious salsa.
  • Squeeze the juice of 1/4 lime into a small bowl and combine it with sour cream to create the crema.
  • In a large pan over medium-high heat, heat olive oil. Add sliced onion and poblano pepper, cooking until softened and lightly charred, about 3 to 4 minutes. Stir in pork and Mexican seasoning, cooking until browned throughout, about 4 to 5 minutes. Lower the heat to medium-low and add chicken stock, tomato paste, salt, and pepper. Stir and cook until everything is well coated, about 1 to 2 minutes.
  • Place tortillas in a damp cloth and heat in the microwave for 30 seconds. Distribute tortillas among plates and generously spread lime crema on top. Add the pork mixture and salsa on the tortillas. Finish by garnishing with the remaining cilantro.
