Toasted almond crusted Key lime pie.
Ingredients:
  • 0.66666668653488 cup toasted slivered almonds
  • 1 cup graham cracker crumbs
  • 0.25 cup white sugar
  • 1 pinch salt
  • 0.25 cup butter, melted
  • 0.75 cup cold heavy cream
  • 4 large egg yolks
  • 0.5 teaspoon grated lime zest
  • 0.5 cup Key lime juice
Instructions:
  • Preheat the oven to 350°F (175°C) for perfect baking results.
  • Create crust: Finely grind almonds in a food processor, then transfer to a medium bowl. Combine with graham cracker crumbs, sugar, and salt. Stir in melted butter until mixture is evenly moistened. Press into a 9-inch pie plate.
  • Bake until crust is beautifully golden brown, 10 to 13 minutes in the preheated oven.
  • As the crust bakes, prepare the filling: In a large bowl, combine condensed milk, cream, egg yolks, and lime zest. Mix well. Gradually add lime juice while whisking to create a thick custard. Pour the custard into the pie crust.
  • Bake for 15 minutes until custard sets. Cool to room temperature on a wire rack, then chill in the refrigerator for 8 hours to overnight, covered loosely with plastic wrap.
