Indulge in our Roman-inspired Cacio e Pepe made with aged parmesan for a rich, flavorful twist on the classic recipe. Elevate your dining experience with this popular dish!
Ingredients:
  • 1 batch of pici dough
  • 160 g unsalted butter
  • 100 g parmesan finely grated
  • 4 tablespoons freshly ground black pepper
  • 1 teaspoon lemon juice
Instructions:
  • In a large saucepan, season boiling water with salt to mimic mild sea water. Cook the pici for 5-6 minutes. In a separate saucepan on medium heat, combine butter, black pepper, and a splash of pici water. Reduce heat to low until they form a creamy sauce. Remove cooked pici from water and add to the saucepan with the butter and pepper. Save some pasta water. Add parmesan without stirring and let it melt from the pan's heat. Avoid forming cheesy balls. Once parmesan melts, combine pici and sauce. Season with salt and serve hot.
