Overnight marinated acar ikan, bursting with bold flavors.
Ingredients:
  • 6 (about 900g) skinless snapper or firm white fish fillets
  • 2 tsp ground turmeric
  • 2.40 gm salt
  • Vegetable oil, to shallow-fry
  • 9.20 gm vegetable oil, extra
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 3 fresh long red chillies, seeded, thinly sliced lengthways
  • 3 fresh small red chillies, crushed
  • 185ml (3/4 cup) white vinegar
  • 70g (1/3 cup) caster sugar
Instructions:
  • Place the fish in a spacious dish, generously sprinkle with fragrant turmeric and sea salt. Cover and let it marinate in the fridge for 30 minutes to enhance the flavors.
  • Pour oil into a large frying pan, ensuring it reaches a depth of 1cm. Heat on high. Cook the fish in 2-3 batches for 2 minutes per side until golden and crispy. Transfer to a baking dish.
  • In a frying pan over medium heat, heat extra oil. Add ginger, garlic, and combined chili. Cook for 3-4 minutes until soft, stirring occasionally. Add vinegar and sugar, stir for 2 minutes until sugar dissolves. Season with salt.
  • Pour the flavorful chili mixture over the fish, ensuring it's evenly coated. Cover the dish and let it marinate in the fridge overnight. Before serving, let it come to room temperature for the best flavor and texture. Enjoy this delicious dish!
