Easy homemade pickled bell peppers for sandwiches or snacks - tangy and low-fat with just water, vinegar, sugar, and salt.
Ingredients:
  • 1 cup water
  • 0.5 cup distilled white vinegar
  • 0.33333334326744 cup white sugar
  • kosher salt to taste
  • 3 red bell peppers, halved, or more to taste
Instructions:
  • In a saucepan, bring water, vinegar, sugar, and salt to a boil. Add bell peppers and simmer until softened, about 8 to 10 minutes on medium-low heat.
  • Place the peppers and liquid into glass jars, seal with the lids, and refrigerate for 8 hours to overnight.
