Zesty vegetable slaw elevates any meal.
Ingredients:
  • 0.25 cup olive oil
  • 0.25 cup sesame seeds
  • 0.5 cup white vinegar
  • 0.33333334326744 cup teriyaki sauce
  • 0.5 teaspoon black pepper
  • 1 teaspoon crushed red pepper flakes
  • 0.25 teaspoon minced fresh ginger root
  • 4 teaspoons granular no-calorie sucralose sweetener (such as Splenda®)
  • 3 stalks celery
  • 4 green onions, chopped
  • 2 carrots, cut into matchsticks
  • 1 yellow bell pepper, sliced
  • 1 small cucumber, sliced
  • 1 small white onion, sliced
Instructions:
  • In a small saucepan over medium heat, warm the olive oil. Add the sesame seeds and toast until lightly browned, approximately 3 minutes. Transfer to a metal mixing bowl and let it cool to room temperature.
  • Combine vinegar, teriyaki sauce, black pepper, red pepper flakes, ginger root, and sweetener with the sesame seed mixture. Toss in celery, green onions, carrots, bell pepper, cucumber, and onion until well coated in the sesame dressing. Chill in the refrigerator until cold before serving.
