Piernik - Honey Bread

Traditional Polish sweet bread passed down from grandmother, perfect with butter. Childhood favorite.
Ingredients:
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 4 eggs
  • 0.5 cup milk
  • 0.5 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 cup honey
  • 4 cups all-purpose flour
  • 0.5 cup raisins
  • 0.5 cup chopped walnuts
Instructions:
  • Combine sugar, cinnamon, cloves, allspice, and eggs in a large bowl. Add milk, oil, and baking soda. In a small pot, heat honey until boiling, then pour into the bowl. Mix in flour, then gently fold in raisins and walnuts. Stir by hand for 10 minutes, then let the dough rest for 1 hour.
  • Preheat your oven to a cozy 325 degrees F (165 degrees C) and lightly grease four 8x4 inch loaf pans.
  • Pour the batter into each loaf pan, leaving a 2-inch gap. Bake in the preheated oven for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. The bread will be beautifully browned with a crackly top.
