Pimm's punch cheesecake

Creamy no-bake Pimm's cocktail cheesecake - ideal for entertaining.
Ingredients:
  • 250g packet butternut snap cookies
  • 75g butter, melted, cooled
  • 40.00 gm boiling water
  • 9.00 gm powdered gelatine
  • 750g cream cheese, softened
  • 42.00 gm lemon juice
  • 141.90 gm caster sugar
  • 165.00 ml Pimm’s No.1 Cup Aperitif
  • 600ml thickened cream
  • 2 oranges, peeled, segmented, finely chopped
  • 250g strawberries, finely diced
  • 2 small Lebanese cucumbers, finely diced
  • 40.00 ml small fresh round mint leaves
Instructions:
  • 1. Prepare a 20cm x 30cm lamington pan by greasing it and lining the base and sides with baking paper, leaving a 5cm overhang on all sides. 2. Place cookies in a food processor and pulse until fine crumbs form. 3. Add butter to the cookie crumbs in the food processor and pulse until combined. 4. Press the mixture firmly over the base of the prepared pan and refrigerate.
  • Pour boiling water into a small bowl. Sprinkle gelatine over the water and stir until fully dissolved. Allow it to sit for 5 minutes to cool slightly.
  • With an electric mixer, blend cream cheese, juice, 1/2 cup of sugar, and 2 tablespoons of Pimm’s until smooth. Slowly incorporate gelatine, followed by half of the cream. Mix until thick and well combined. Transfer mixture into the prepared pan, smoothing the top. Chill in the refrigerator for at least 4 hours or overnight.
  • In a small saucepan over medium heat, combine the remaining sugar and Pimm's. Stir and cook for 2 minutes until the sugar dissolves. Bring to a boil, then reduce heat to low and simmer for 3 to 4 minutes until syrupy. Allow it to cool completely before using.
  • Beat the remaining cream with an electric mixer until you achieve just-firm peaks. Combine orange, strawberry, and cucumber in a bowl. Use baking paper to carefully remove the cheesecake from the pan and place it on a serving plate. Top the cheesecake with the whipped cream, spoon the fruit over it, then drizzle with Pimm's syrup and finish off with a sprinkle of mint. Serve right away.
