Delicious mini pineapple upside-down cakes topped with coconut cream—a tropical treat for pina colada lovers.
Ingredients:
  • 10 pineapple rings in juice
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.75 cup salted butter, melted
  • 2 large eggs
  • 0.5 cup coconut cream
  • 0.25 cup whole milk
  • 1 tablespoon coconut extract
  • 2 teaspoons vanilla extract
  • 0.66666668653488 cup packed brown sugar
  • 0.33333334326744 cup butter, melted
  • 10 maraschino cherries
  • 2 cups heavy whipping cream
  • 1 teaspoon cream of tartar
  • 0.5 cup confectioners' sugar
  • 0.25 cup pineapple juice
  • 3 tablespoons coconut cream
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare 10 mini cake molds by greasing them.
  • Separate pineapple rings from juice, saving 1/4 cup for later.
  • In a small bowl, mix together the flour and baking powder.
  • In a large bowl, mix melted butter and white sugar until well blended using an electric mixer. Add eggs one at a time. Stir in pineapple juice, coconut cream, milk, coconut extract, and vanilla extract. Gradually mix in the flour mixture until smooth.
  • In a bowl, blend brown sugar and 1/3 cup melted butter until smooth. Spoon mixture into cake molds. Add 1 pineapple ring to each mold, and top with a maraschino cherry in the center of each ring.
  • Scoop batter into cake molds using an ice cream scoop.
  • Bake in the preheated oven for 20 to 22 minutes until a toothpick comes out clean. Let cool to room temperature for about 20 minutes, then gently invert cakes onto a plate after running a knife around the edges to loosen.
  • In a chilled metal bowl, pour heavy cream and add cream of tartar. Beat with an electric mixer until almost holding peaks. Gradually add confectioners' sugar while continuing to beat until soft peaks form. Finally, fold in 1/4 cup pineapple juice, 3 tablespoons coconut cream, and 1 tablespoon coconut extract.
  • Garnish cakes with fluffy whipped cream on the side.
