Decadent pineapple cheesecake with cinnamon graham cracker crust.
Ingredients:
  • 1 (20 ounce) can crushed pineapple
  • 12 cinnamon graham crackers
  • 0.33333334326744 cup unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 0.66666668653488 cup white sugar
  • 2 large eggs, beaten
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream
  • 0.25 cup brown sugar
  • 0.5 tablespoon ground cinnamon
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while letting the pineapple drain in a colander.
  • Combine crushed graham crackers with melted butter and firmly press into the base of a 9-inch springform pan.
  • Using an electric mixer on medium speed, blend cream cheese and white sugar until smooth. Incorporate eggs, flour, salt, and vanilla extract until well combined.
  • Evenly distribute the pineapple over the crust and generously pour the luscious cream cheese filling on top.
  • Bake in the preheated oven for 30 minutes until set. Remove and let cool for an additional 30 minutes while keeping the oven on.
  • Combine sour cream, brown sugar, and cinnamon in a bowl, then generously spread over the slightly cooled cheesecake.
  • Place the dish in the oven to allow the topping to set for approximately 10 minutes. Ensure the cheesecake is fully chilled before serving, ideally for 8 hours to overnight.
