Whip up a tasty pineapple and ham fried rice with peas, green onion, and eggs using leftover cold rice for a speedy and satisfying family dinner.
Ingredients:
  • 1 cup uncooked white rice
  • 2 tablespoons sesame oil
  • 3 green onions, thinly sliced including tops
  • 1 cup diced ham
  • 0.5 cup peas
  • 1 (8 ounce) can pineapple chunks, drained
  • 1 egg, beaten
  • 1 tablespoon white sugar
  • 0.5 teaspoon white pepper
  • 0.5 teaspoon garlic powder
  • 0.25 cup soy sauce
Instructions:
  • In a saucepan over high heat, boil the rice and water. Then, cover, reduce heat to medium-low, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed. Spread the cooked rice on a rimmed baking sheet and refrigerate for about 20 minutes until cooled.
  • In a large skillet or wok over medium-high heat, warm sesame oil. Sauté green onions, ham, and peas until onions soften, about 2 minutes. Add pineapple and cook until it caramelizes slightly, about 2 minutes. Push ingredients to the side, pour in beaten egg, and let it cook until it starts to set, around 30 seconds. Mix everything together in the wok.
  • Combine the cooled rice with sugar, salt, white pepper, and garlic powder in the wok, stir continuously to prevent sticking. Heat for about 3 minutes until warmed through. Sprinkle soy sauce over the rice and mix well.
