Grilled chicken breasts with sweet and spicy pineapple salsa. Customize spice level with jalapenos.
Ingredients:
  • 4 (6 ounce) boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons Jamaican jerk seasoning
  • 1 cup diced pineapple
  • 0.25 cup diced red bell pepper
  • 1 small jalapeno pepper, seeded and minced
  • 2 tablespoons minced red onion
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon lime juice
Instructions:
  • Fire up the grill to medium-high heat and give the grate a light coating of oil.
  • Flatten chicken to 1-inch thickness to ensure even grilling. Coat chicken with oil and generously season with Jamaican jerk seasoning on both sides. Allow flavors to meld.
  • Mix together the pineapple, red pepper, jalapeno pepper, red onion, cilantro, lime juice, and salt in a small bowl to create the salsa. Keep it to the side.
  • Grill the chicken on high heat, then reduce to medium. Grill for 12-14 minutes, turning once, until no longer pink in the center and juices run clear. Ensure the temperature reads 165 degrees F (74 degrees C). Let it rest on a plate for 5 minutes before serving.
  • Spoon the flavorful salsa mixture over the succulent chicken before serving.
