Elevate your pancakes with delicious pineapple upside-down pancakes. Once you try them, standard pancakes just won't compare.
Ingredients:
  • 2 cups heavy cream
  • 3 tablespoons white sugar
  • 2 teaspoons vanilla extract
  • 0.5 cup unsalted butter, softened
  • 1 tablespoon ground cinnamon
  • 2 cups pancake mix
  • 2 large eggs
  • 1 tablespoon unsalted butter, or more as needed
  • 1 cup finely chopped fresh pineapple
  • 0.25 cup granulated sugar
Instructions:
  • In a saucepan over medium-high heat, bring cream, sugar, and vanilla to a boil. Reduce heat and simmer, stirring regularly, until the sauce thickens (2 to 4 minutes). Remove from heat and transfer to a small pitcher. Let it sit at room temperature until serving.
  • Combine butter, cinnamon, and brown sugar until fully blended to create delicious cinnamon butter; set aside.
  • Combine the pancake mix, milk, and eggs until smooth. Allow the batter to rest for 5 minutes.
  • Preheat a griddle to 350 degrees F (175 degrees C), butter the surface, then ladle 1/2 cup of batter for each pancake. Top each with a generous tablespoon of chopped pineapple. Cook until edges are dry, surface is no longer glossy, about 2-4 minutes. Sprinkle a pinch of sugar on pineapple, flip, and cook until caramelized, another 2-4 minutes. Keep warm in oven and repeat for remaining pancakes.
  • Top pancakes with a dollop of cinnamon butter and drizzle with vanilla cream sauce before serving.
