French-style pizza tart with sweet onion marmalade, anchovies, and olives.
Ingredients:
  • 375g block puff pastry, thawed
  • 365g jar onion marmalade (see note)
  • 15g can anchovy fillets
  • 25 pitted black olives
  • 20.00 ml chopped fresh thyme
  • Rocket leaves, to garnish
Instructions:
  • Preheat the oven to 220°C for optimal baking results.
  • Roll out the pastry into a generous 30cm x 20cm rectangle on a baking sheet lined with parchment paper. Spread the onion marmalade in the center, ensuring to leave a 1.5cm border all around.
  • Cut anchovy fillets in half lengthwise, saving the oil. Arrange them in a diamond pattern over the onion. Put an olive in the center of each diamond, sprinkle with thyme, and drizzle with a bit of anchovy oil. Score around the pastry border with a knife (without cutting completely) and brush with egg.
  • Bake until pastry is golden and crisp, then top with fresh rocket before serving.
