Pistachio, almond & hazelnut brittle

Indulgent nut brittle, perfect for snacking alone or pairing with coffee, ice cream, or as a lunchbox treat.
Ingredients:
  • Vegetable oil, to grease
  • 120g (3/4 cup) whole hazelnuts
  • 120g (2/3 cup) whole blanched almonds
  • 115g (3/4 cup) pistachio kernels
  • 440g (2 cups) caster sugar
  • 30g butter
Instructions:
  • Preheat the oven to 180°C. Grease a 19 x 29cm slice pan with oil. Toast hazelnuts on a baking tray for 5 minutes until golden and fragrant. Rub the hazelnuts in a tea towel to remove skins. Set aside.
  • Spread the almonds and pistachios evenly on a baking tray and bake in a preheated oven for 5 minutes, or until they are toasted to perfection.
  • In a non-stick frying pan over medium-high heat, caramelize sugar for 5 minutes until golden brown. Mix in nuts and butter until coated. Transfer to a pan and let it set for 15 minutes.
  • Serve by breaking into large shards.
