Pistachio white chocolate biscuits

Indulge in delicious and simple cookies for a perfect Saturday treat!
Ingredients:
  • 113.75 gm light olive oil
  • 180.00 gm brown sugar
  • 250.00 ml plain flour
  • 75.00 gm self-raising flour
  • 100g pistachio
  • 200g good-quality white chocolate, finely chopped
  • 50g good-quality white chocolate, melted
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • 1. Beat egg, oil, and sugar in a bowl with an electric mixer until thick and pale. 2. Sift flours over the mixture, then add pistachios and chopped chocolate. 3. Mix until well combined.
  • Take 2 teaspoons of the mixture and shape into balls. Place them on baking trays and gently press them down with a fork. Bake for 12 to 15 minutes, switching trays halfway through, until the biscuits are lightly golden. Let them rest on the trays for 5 minutes before moving them to a wire rack to cool.
  • Drizzle biscuits with luscious melted white chocolate and let it set before serving.
