French Pithiviers: Flaky puff pastry filled with rich almond frangipane from Orléans.
Ingredients:
  • 7 tablespoons unsalted butter, softened
  • 1 cup almond flour
  • 3 large egg yolks, divided
  • 2 tablespoons rum
  • 2 sheets frozen puff pastry, thawed
  • 1 tablespoon confectioners' sugar
Instructions:
  • Preheat your oven to a perfect 400 degrees F (200 degrees C) and prepare a baking sheet with parchment paper.
  • In a bowl, cream together butter and sugar using an electric mixer until smooth. Add almond flour, 2 egg yolks, and rum, then mix until the frangipane is silky.
  • Roll out puff pastry sheets and cut them into 2 equal circles. Lay the first circle on the baking sheet, then prick all over with a fork. Spread frangipane evenly over the circle, making sure to leave a 1/2-inch border around the edge.
  • Moisten the exposed edge of the puff pastry with a little water, then place the second puff pastry circle on top and firmly press the edges together to seal.
  • With a sharp knife, score a decorative pattern around the edge. Then, carefully draw decorative lines on the surface without slicing completely through. Lastly, whisk the remaining egg yolk and brush it over the top.
  • Place in the preheated oven for 10 minutes, then lower the temperature to 350 degrees F (175 degrees C) and continue baking until the pastry is puffed up and lightly browned, for about 20 more minutes.
  • Take out of the oven and sprinkle with confectioners' sugar.
  • Position an oven rack 6 inches below the broiler element and preheat the broiler.
  • Broil the pithiviers until a golden, shiny crust forms, for about 1 to 2 minutes. Keep a close eye to prevent burning.
