Ploughman's platter with roast vegetable scones

Transform holiday leftovers into a festive platter with veggie scones.
Ingredients:
  • 21.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 80g mixed salad leaves
  • 1 pink lady apple, cored, thinly sliced
  • 1 Lebanese cucumber, halved lengthways, sliced diagonally
  • 62.50 ml pecan pieces, toasted
  • 200g leftover roast turkey, thinly sliced
  • 60g vintage cheddar, sliced
  • 96.53 gm jellied cranberry sauce
  • Butter, softened, to serve
  • 150.00 gm self-raising flour, plus extra for dusting
  • 10.00 gm caster sugar
  • 25g butter, chilled, chopped
  • 250.00 ml leftover roast root vegetables, mashed
  • 20.00 ml fresh chives, chopped
  • 64.38 gm milk, plus extra for brushing
  • 40.00 ml grated vintage cheddar
Instructions:
  • Prepare the Roast Vegetable Scones; Begin by preheating your oven to 220C/200C fan-forced and lining a baking tray with baking paper. In a bowl, sift together flour, sugar, and a pinch of salt. Add butter and using your fingertips, gently combine until the mixture resembles fine crumbs. Mix in the roast vegetables and chives until well combined.
  • Create a well in the center and pour in the milk. Stir with a flat-bladed knife until a sticky dough forms. Transfer onto a lightly floured surface and gently knead until smooth. Pat the dough into a 15cm round shape. Use a 5cm round cutter to cut out 4 rounds from the mixture. Combine dough trimmings and repeat to make 8 rounds. Arrange scones closely on a baking tray. Brush the tops with additional milk and sprinkle with cheddar. Bake for 12 to 15 minutes until golden and scones sound hollow to the touch.
  • In a large bowl, combine lemon juice, oil, salt, and pepper. Whisk together with a fork. Add salad leaves and toss to evenly coat.
  • Assemble salad leaves, apple slices, cucumber slices, pecans, turkey slices, cheddar cheese, and scones on a decorative serving board. Accompany with cranberry sauce and butter for a charming presentation.
