Decadent citron, raisin, and pecan pudding baked with butter, sugar, eggs, warm spices, and breadcrumbs. Enjoy warm or chilled.
Ingredients:
  • 0.5 cup butter, room temperature
  • 1 cup white sugar
  • 6 eggs, room temperature
  • 0.5 cup chopped candied citron
  • 1.5 cups pitted prunes, chopped
  • 0.5 cup raisins
  • 1 cup coarsely chopped pecans
  • 0.5 cup all-purpose flour
  • 1.5 cups fine dry bread crumbs
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon ground allspice
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), and prepare your 2 quart souffle or casserole dish by greasing and flouring it.
  • In a large bowl, mix the butter and sugar until light and fluffy. Gradually add eggs, one at a time, beating well after each addition.
  • Combine the citron, prunes, raisins, and pecans in a separate bowl. Mix in the flour and toss until everything is coated evenly.
  • Combine the fruit and nut mixture, bread crumbs, cinnamon, nutmeg, and allspice with the butter mixture. Mix thoroughly and transfer to the prepared dish.
  • Place in a preheated oven for 50-55 minutes until golden brown.
