Relieve meal planning stress with a simple dish: Poached chicken salad with sweet maple-baked pears.
Ingredients:
  • 600g chicken breast fillets
  • 1 litre chicken style liquid stock
  • 3 small packham pears, quartered, cored, stems intact
  • 168.75 gm maple syrup
  • 75.90 gm walnuts
  • 80g baby rocket
  • 1/2 red onion, thinly sliced
  • 40.00 ml red wine vinegar
  • 50g parmesan, shaved
Instructions:
  • In a large saucepan, generously cover the chicken with flavorful chicken stock. Bring to a gentle boil over medium heat, then lower the heat to a gentle simmer. Cover and cook for 5 minutes. Remove from heat and let it rest for 15 minutes. Once cooled, gracefully slice the chicken into thin pieces.
  • Preheat the oven to 200°C/180°C fan-forced. Line a baking tray with parchment paper. Arrange the pears on the tray, drizzle with maple syrup, and bake for 35 minutes until caramelized and tender. Add walnuts to the tray halfway through baking.
  • Place arugula in a generous serving platter, then layer with onions, pears, walnuts, and chicken on top.
  • Combine oil and vinegar in a bowl and whisk. Pour the dressing over the salad. Sprinkle with parmesan and drizzle with the remaining pan juices from the pears. Season with salt and pepper, then enjoy your delicious salad.
