Asian-inspired poached chicken salad - fresh and flavorful, perfect for a quick and light meal.
Ingredients:
  • 3 x 170g chicken breast fillets
  • 40.00 ml rice vinegar
  • 40.00 ml gluten-free tamari (see note)
  • 3 tsp sesame oil
  • 12.00 gm sesame seeds
  • 3 bunches asparagus, blanched for 2 minutes in boiling water, refreshed
  • 60g baby Asian salad leaves (see note) or mixed baby salad leaves (mesclun)
Instructions:
  • In a saucepan, submerge the chicken in water, season with sea salt and freshly ground black pepper, cover with a lid, and bring to a boil. Reduce heat and simmer for 10 minutes. Let the chicken rest in the liquid for 10 more minutes, then drain, slice thickly, and set aside.
  • Whisk together vinegar, tamari, sesame oil, spring onions, and sesame seeds in a bowl until well combined.
  • Arrange the asparagus, salad leaves, and chicken on individual plates, then generously drizzle with the dressing for a burst of flavor.
