Poached chicken with baby vegetables

Simplify dinner with a quick and healthy poached chicken dish.
Ingredients:
  • 1L (4 cups) chicken style liquid stock
  • 1 bay leaf
  • 4 (about 150g each) skinless chicken breasts
  • 1 bunch baby carrots, trimmed
  • 1 bunch pencil leeks*, trimmed
  • 250.00 ml fresh baby peas or frozen baby peas
  • Chopped parsley, to garnish
Instructions:
  • In a large saucepan, bring stock and bay leaf to a boil. Add chicken and carrots, then simmer covered on low heat for 5 minutes. Add leeks and peas, and simmer for an additional 2-3 minutes until chicken is cooked through. Slice chicken, divide into four bowls, top with vegetables and some stock, then garnish with parsley and season with black pepper.
