Delicious polenta muffins complement spiced corn soup for a cozy meal. Enjoy the perfect pairing!
Ingredients:
  • 150g self-raising flour
  • 90g instant polenta
  • 60g unsalted butter, at room temperature
  • 2 eggs
  • 100ml buttermilk
  • 125.00 ml drained canned corn
Instructions:
  • Preheat your oven to 180°C and generously grease a 6-hole medium muffin pan.
  • In a medium bowl, combine sifted flour, baking powder, polenta, and a pinch of salt. Rub in the butter until the mixture is crumbly.
  • In a jug, whisk the eggs and buttermilk until combined, then mix into the dry ingredients. Fold in the corn until evenly distributed. Spoon the mixture into the muffin pan and bake for 20-25 minutes, or until golden brown.
