Poor Man's Chicken Fried Steak

Economical twist on a classic chicken-fried steak using ground beef with creamy milk gravy.
Ingredients:
  • 0.5 pound ground beef
  • 1 cup all-purpose flour
  • salt and ground black pepper to taste
  • 4 eggs
  • 3 tablespoons vegetable oil, or as needed
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour, or more if needed
  • 1 cup milk
Instructions:
  • Divide the meat into 4 portions and gently press them into thin beef patties. Heat a skillet over medium heat until hot, and sear the beef patties until golden on both sides, cooking for approximately 4 minutes each side. Set the cooked burgers aside. Discard excess grease, keeping the flavorful drippings in the skillet.
  • Combine 1 cup of flour with salt and black pepper in one shallow bowl. In another shallow bowl, whisk eggs until smooth, adding 1/2 teaspoon of water, if necessary.
  • In a skillet over medium heat, warm vegetable oil. Dip cooked burgers in eggs, then coat with seasoned flour three times for a thick crust. Pan-fry burgers in hot oil until golden brown on both sides, approximately 5 minutes per side. Remove burgers and set aside.
  • Remove excess vegetable oil with a spoon. Melt butter in the skillet over medium heat, stirring to release the flavorful brown bits. Whisk in 1 tablespoon of flour until smooth. For a thicker gravy, add more flour. Slowly whisk in milk until the gravy thickens. Season with salt and black pepper, then pour over the chicken-fried beef patties before serving.
