Poor Man's Pudding

Classic French-Canadian sweet treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 cup white sugar
  • 1 egg
  • 1 cup milk
  • 2 cups brown sugar
  • 1.5 cups hot water
  • 2 tablespoons butter, melted
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then whisk together the flour and baking powder in a small bowl.
  • In a bowl, combine white sugar, oil, and egg until smooth. Alternate mixing in the flour mixture and milk. Pour the batter into a 9-inch square pan. Dissolve brown sugar in hot water, then stir in melted butter. Drizzle the syrup over the pudding.
  • Bake in the oven until the pudding is firm and golden brown on top, approximately 40 minutes.
