Refreshingly light summer salad with cucumber, cantaloupe, and poppy seed dressing - perfect for outdoor gatherings.
Ingredients:
  • 0.5 cantaloupe - peeled, seeded, and cut into 1/2-inch cubes
  • 2 cucumbers - peeled, seeded, and cut into 1/2-inch cubes
  • 0.5 small red onion, finely diced
  • 1 large stalk celery, diced
  • 0.33333334326744 cup poppy seed dressing, or more to taste
  • 3 tablespoons red wine vinegar
  • 1 teaspoon poppy seeds, or to taste
Instructions:
  • Drain excess liquid from cantaloupe and cucumbers by placing them in a colander, topping with a plate, and weighting it with a heavy object like a large can of food. Toss every 30 minutes for 2 to 3 hours.
  • Combine the cantaloupe, cucumbers, onion, and celery in a large bowl. Pour in the poppy seed dressing and red wine vinegar, then toss everything together until coated. Finally, sprinkle in the poppy seeds and stir until well mixed.
