Elevate classic lemon bars with zesty lemon and crunchy poppy seeds for a vibrant, fresh, and sweet twist.
Ingredients:
  • cooking spray
  • 0.5 cup butter, softened
  • 0.25 cup confectioners' sugar
  • 1 cup all-purpose flour
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground cardamom
  • 1 tablespoon poppy seeds
  • 1.5 cups white sugar
  • 3 large eggs
  • 0.33333334326744 cup freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 0.5 cup all-purpose flour
  • 1 tablespoon confectioners' sugar, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat an 8-inch square baking dish with cooking spray.
  • In a bowl, blend butter and confectioners' sugar using an electric mixer until creamy (2 to 3 minutes). Add flour, salt, and cardamom, mix until combined. Fold in poppy seeds evenly. Press dough into a baking dish using floured hands.
  • Bake the crust in the preheated oven until the edges are lightly golden, for about 18 minutes.
  • As the crust bakes, mix sugar, eggs, lemon juice, and lemon zest in a bowl. Use an electric mixer to beat until smooth for 1 to 2 minutes. Then, add flour and stir until just combined.
  • Once the golden crust is ready, fill it with the luscious filling and pop it back into the oven.
  • Bake for 30 minutes until the filling is puffy and lightly browned. Let it cool on a wire rack before cutting into 16 squares and dusting with confectioners sugar for a sweet finish.
