Pork & lemongrass curry

30-Minute Coconut Pork Curry: Succulent pork infused with rich coconut milk and a blend of aromatic spices.
Ingredients:
  • 1 small white onion, coarsely chopped
  • 1 clove garlic, halved
  • 2 small red chillies, halved, seeded
  • 62.50 ml chopped fresh lemongrass
  • 62.50 ml chopped fresh coriander
  • 18.20 gm peanut oil
  • 1kg diced pork
  • 10.00 gm ground cumin
  • 125ml water
  • 2 x 140ml can coconut cream
Instructions:
  • Blend onion, garlic, chili, lemongrass, and coriander into a finely chopped mixture.
  • In a wok, heat oil over medium-high heat. Brown pork in batches until cooked through.
  • Stir in the onion mixture, garam masala, and cumin. Cook for 2 minutes until fragrant. Add the pork back to the wok along with water and coconut cream. Bring to a boil.
  • Simmer on low heat until sauce thickens, about 5 minutes. Serve with rice and garlic & coriander naan bread.
