Ingredients:
  • 18.40 gm vegetable oil
  • 1kg pork fillet, cut into 3cm slices
  • 1 brown onion, cut into wedges
  • 3 garlic cloves, finely chopped
  • 87.50 gm vindaloo curry paste
  • 1 long green chilli, chopped
  • 500ml chicken style liquid stock
  • 4.00 gm brown sugar
  • 40.00 ml malt vinegar
  • 250g green beans, trimmed, halved
Instructions:
  • In a large, heavy-based saucepan, heat oil over medium-high heat. Brown the pork in batches for 2 to 3 minutes. Transfer the pork to a large bowl.
  • Saute onions and garlic until softened over medium-low heat. Stir in vindaloo paste and chili, cook until aromatic. Increase heat to high, add stock, and bring to a boil. Reduce heat and simmer uncovered until sauce thickens slightly, about 10 minutes.
  • Add the pork back into the flavorful vindaloo sauce and simmer for 3 minutes until the pork is cooked through. Then, stir in the sugar and vinegar and cook for 1 minute until the sugar is fully dissolved.
  • Boil beans in salted water for 3 minutes until tender and vibrant. Drain, then mix into vindaloo sauce. Serve with rice.
