Portuguese Cod Fish Casserole

Baked salt cod casserole with garlic, potatoes, and Mediterranean seasonings.
Ingredients:
  • 2 pounds salted cod fish
  • 5 large potatoes, peeled and sliced
  • 3 large onions, sliced
  • 0.75 cup olive oil
  • 1 tablespoon chopped fresh parsley
  • 1.5 teaspoons crushed red pepper flakes
  • 1 teaspoon paprika
  • 3 tablespoons tomato sauce
Instructions:
  • 1. Soak salted cod in cold water overnight or for a few hours, changing the water at least once. 2. Bring a large pot of water to a boil. 3. Boil the cod for 5 minutes, then drain and let it cool. Keep the cod in large pieces. 4. Set aside for later use.
  • Preheat your oven to 375°F (190°C).
  • In an 8x11 casserole dish, arrange a layer of half the potato slices, all the cod, and all the onions. Top with the remaining potato slices. In a small bowl, combine olive oil, garlic, parsley, pepper flakes, paprika, and tomato sauce, then pour the mixture evenly over the casserole.
  • Roast in a preheated oven until potatoes are tender, about 45 minutes.
