Indulge in a comforting pot roast with savory balsamic onions perfect for a chilly evening.
Ingredients:
  • 1 (2 1/2 pound) boneless beef chuck roast
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 0.5 teaspoon garlic powder
  • 1 large onion, halved and sliced
  • 0.5 cup balsamic vinegar
Instructions:
  • Generously coat the roast with a blend of salt, pepper, and garlic powder for enhanced flavor.
  • Preheat a skillet over medium-high heat. Sear the roast in the hot skillet until golden brown on all sides, for about 3 to 5 minutes per side.
  • Place the roast in a slow cooker and surround it with onion slices. Drizzle vinegar over the roast and onions.
  • Slow cook the roast until it becomes tender and easily falls apart, which should take 6 to 8 hours on Low setting. Shred the meat and place it back in the slow cooker along with the flavorful juices.
