Satisfying bacon, potato, and corn skillet ready in minutes.
Ingredients:
  • 0.5 pound thick sliced bacon, cut into 1/2-inch pieces
  • 2 carrots, diced
  • 4 stalks celery, chopped
  • 1 bay leaf
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 4 cups milk
  • 2 large potatoes, peeled and diced
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 pinch paprika
Instructions:
  • Fry the bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer the bacon to a plate, keeping the flavorful grease in the pan. Add the carrot, celery, and bay leaf to the skillet and sauté in the savory bacon grease for 5 minutes.
  • Melt butter in a large pot over medium-low heat. Stir in flour and cook for 5 minutes, stirring constantly. Gradually add milk and bring to a simmer over medium-high heat. Cook for 5 minutes, whisking frequently. Add bacon, cooked veggies, potatoes, and corn. Simmer, then cook on medium-low until potatoes are tender, about 20 minutes. Adjust consistency with more milk if needed. Serve garnished with paprika.
