Ingredients:
  • 36.40 gm olive oil
  • 2 leeks, white part only, sliced
  • 5 bacon rashers, chopped
  • 1kg potatoes, peeled and chopped
  • 1L chicken style liquid stock
  • 375ml can evaporated light milk (or cream)
  • Parsley or chives, to garnish
Instructions:
  • Warm fragrant oil in a spacious pot over gentle heat.
  • Sauté bacon and leek until leek is tender. Add potatoes and toss to coat in the delicious bacon and leek mixture.
  • Pour in the flavorful stock and bring the mixture to a lively boil. Reduce the heat to low, cover the pot, and gently simmer for 30 minutes to let the flavors fully develop.
  • Cool slightly, then blend using a hand blender or in batches in a regular blender.
  • Mix in the evaporated milk and garnish with a sprinkle of parsley or chives before serving.
