Potato and avocado salad with mixed herb dressing

Versatile mixed herb dressing perfect for potato salad, grilled prawns, shellfish, fish, or chicken breasts.
Ingredients:
  • 1kg golden delight potatoes, peeled, cut into wedges
  • 1 large avocado, sliced
  • 3 celery stalks, trimmed, thinly sliced
  • 75.90 gm roughly chopped walnuts
  • 80g mild blue cheese, chopped
  • 56.88 gm olive oil
  • 40.00 ml white wine vinegar
  • 62.50 ml chopped fresh flat-leaf parsley leaves
  • 40.00 ml chopped fresh mint leaves
  • 40.00 ml chopped fresh chives
  • 40.00 ml drained capers, chopped
  • 1 garlic clove, crushed
Instructions:
  • Boil potatoes in a large pot of salted water until just tender, about 8-10 minutes. Drain, chill in cold water, then cool for 20 minutes.
  • Prepare the dressing by combining olive oil, vinegar, parsley, mint, chives, capers, and garlic in a bowl. Mix well until fully incorporated.
  • Combine the potato, avocado, celery, walnuts, and cheese in a bowl. Drizzle with dressing and enjoy!
