Delicious potato and cheese frittata, perfect for a cozy Sunday brunch.
Ingredients:
  • 2 large russet potatoes, peeled and shredded
  • 1 medium onion, diced
  • salt and pepper to taste
  • 0.5 cup shredded Cheddar cheese
  • 4 eggs, beaten
Instructions:
  • Preheat the oven to 400°F (200°C) to create the perfect cooking environment.
  • In a large skillet, heat oil over medium-high heat until hot. Add potatoes and fry until crispy and golden, about 15 minutes. Reduce heat to medium, then add onions and cook until softened. Season with salt and pepper before pouring eggs over the mixture.
  • Bake the skillet in the oven for 10 minutes until the eggs are set. Sprinkle shredded cheese on top and bake for an additional 5 minutes until melted.
