Potato and pumpkin bake

Ingredients:
  • 850g unpeeled Desiree potatoes, thinly sliced
  • 40g packet Produce Partners Roast Vegetable Medley
  • 500g pumpkin, peeled, deseeded, thinly sliced
  • 255.00 gm chicken style liquid stock
  • 250.00 ml fresh breadcrumbs
  • 250.00 ml grated tasty cheese
  • 36.40 gm olive oil
Instructions:
  • Preheat the oven to 190°C and generously grease a 5.5cm deep, 26cm x 17cm (base) ovenproof dish.
  • 1. Arrange one-third of the potato slices on the bottom of the dish. Sprinkle with 2 teaspoons of the coating. Layer half of the pumpkin on top followed by another sprinkle of coating. Repeat the layers, ending with a final layer of potato. Pour the stock over the top. Cover with foil and bake for 40 minutes.
  • Mix together the breadcrumbs, cheese, oil, and remaining coating. Remove the foil from the dish and sprinkle the vegetables with the cheese mixture. Bake uncovered for an additional 20 minutes, or until golden and tender. Serve and enjoy!
