Golden potato cakes paired with ocean trout and a dollop of mayonnaise make a special and satisfying meal.
Ingredients:
  • 1kg desiree potatoes, peeled, quartered
  • 5 shallots, finely sliced
  • 30.00 ml chopped fresh dill
  • 1 egg
  • Freshly ground pepper
  • 40.00 ml plain flour
  • 36.40 gm olive oil
  • 120g pkt baby mesclun
  • 100g sliced ocean trout
  • 39.60 gm Praise low fat mayonnaise
  • Lemon wedges, to serve
Instructions:
  • Boil the potatoes in a saucepan until tender. Drain and mash them. Mix in the shallots, dill, egg, and season with pepper. Allow the mixture to cool slightly and shape it into 4 large patties.
  • Coat potato cakes in flour, shaking off excess. Heat olive oil in a large nonstick frying pan over medium heat. Fry potato cakes for 2-3 minutes per side until golden brown. Transfer to a plate.
  • Arrange the mesclun on serving plates, layer with a potato cake, ocean trout, and a drizzle of mayonnaise. Accompany with lemon wedges on the side for serving.
