Feed a crowd with this easy, delicious potato salad, ideal for family reunions and summer parties serving up to 40 guests.
Ingredients:
  • 10 pounds potatoes
  • 24 eggs
  • 4 cups mayonnaise
  • 4 teaspoons salt, or to taste
  • 1 tablespoon prepared yellow mustard
  • 2 teaspoons ground black pepper
  • 2 cups finely chopped green onions
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer on medium-low heat until tender, about 20 minutes. Drain, cool, peel, and dice the potatoes. Transfer to a bowl, cover, and refrigerate for 8 hours to overnight.
  • As the potatoes cook, put eggs in a saucepan and cover with water. Boil, then let eggs sit in hot water for 15 minutes. Cool under cold running water, peel, and chop. Transfer to a bowl, cover, and refrigerate for 8 hours to overnight, alongside the potatoes.
  • Mix together potatoes, eggs, and green onions in a sizable mixing bowl or roasting pan. Incorporate mayonnaise, salt, mustard, and pepper, tossing delicately to blend. Chill until serving time.
