Prawn, asparagus and baby corn stir-fry

Elevate your dinner game with a flavorful prawn stir-fry featuring asparagus and baby corn.
Ingredients:
  • 2 bunches asparagus (see tip), sliced diagonally
  • 3 spring onions, cut into 6cm lengths
  • 425g can baby corn, drained, halved lengthways
  • 20.00 ml minced ginger
  • 250g Brand microwave brown rice
  • Dried chilli flakes (optional), to serve
  • 42.00 gm soy sauce
  • 24.40 gm fish sauce
  • 18.00 gm white sugar
  • 62.50 gm water
  • 600g Australian peeled raw banana prawns, tails on
  • 36.80 gm vegetable oil
Instructions:
  • 1. Heat oil in a wok or large frying pan over high heat. Stir-fry prawns for 4-5 mins until fully cooked, then transfer to a plate. Add asparagus, spring onion, corn, and ginger to the pan and stir-fry for 1-2 mins until tender.
  • To prepare the sauce, simply combine all the ingredients in a bowl. Then, microwave the rice according to the package instructions.
  • Combine the prawns and sauce in the wok and simmer for 1 minute. Garnish with chili, if desired, and serve with rice.
