Prawn, fennel and orange salad

Elevate your Christmas spread with this luxurious and indulgent salad.
Ingredients:
  • 350g piece Greek fetta
  • 60ml olive oil
  • 42.00 gm fresh orange juice
  • 30.00 ml finely chopped hazelnuts
  • salt and cracked black pepper
  • 24 cooked king prawns, peeled, deveined, with tails intact
  • 2 baby fennel bulbs, trimmed, finely sliced, with a few fronds reserved
  • 1/2 red onion, finely sliced
  • 3 oranges, peeled and cut into rounds
Instructions:
  • Slice the feta into 1cm-thick rectangles.
  • Combine the olive oil, orange juice, hazelnuts, salt, and pepper in a non-metallic bowl, whisking until fully mixed.
  • Assemble prawns, fennel, onion, orange, and feta on plates for serving.
  • Pour the dressing generously over the dish and sprinkle with the saved fennel fronds before presenting.
